We arrived at an olive oil mill with over 300 years of history, located in a remote spot in the mountains of the Malaga province, bordering Granada. There, in a small village of just 4,000 inhabitants, the owner of the mill was waiting for us—a property that has been passed down through his family for generations.

After the introduction and welcome, breakfast awaited us at the mill. Everything was produced there by the family—the bread, the vegetables (the flavor of the organic tomatoes was incredible), the olive oil, the honey… There was also coffee, tea, milk, water, and herbal infusions.

After breakfast, we took a guided tour of the olive grove, which has over 300 years of history. There, we learned about the different crops and varieties grown on the property.

We sat down for a masterclass olive oil tasting, where we learned to distinguish Virgin from Extra Virgin, mild from intense oils, acidity levels, polyphenols, and discovered how different olive varieties can have completely distinct scents, aromas, and textures.

The family’s grandmother prepared a meal using local products from the Malaga mountains, including stews, traditional dishes, and a delicious dessert made with olive oil.
