CANIBAL Chardonnay
Chardonnay · 6 months in new French oak
A rare, barrel-aged expression of Andalusian Chardonnay. Antonio Mérida’s disruptive white from the mountains of Mijas.
This is the golden Chardonnay that surprised you at the tasting. Handcrafted in tiny batches by Antonio Mérida, this is a far cry from commercial whites. Aged uniquely in small oak barrels, it’s a rare gem you won’t find on supermarket shelves. Pure, unfiltered authenticity delivered to your door.
The story
Antonio Mérida doesn’t do boring wines. “Caníbal” is his bold take on a classic white grape, proving that a true garage winery in Mijas can produce a Chardonnay with incredible personality. Every bunch is hand-picked, organically farmed, and fermented with an obsessive attention to detail. It’s a disruptive, limited-production white that carries the sea breeze and the wild spirit of the Andalusian mountains straight to your glass.
Tasting notes
The Grape: 100% locally grown Chardonnay.
The Aging: Unconventionally aged in small oak barrels, giving it a signature amber hue and complex depth.
On the Nose: A vibrant explosion of tropical fruits (like mango) and green apple, perfectly balanced with elegant citrus blossoms.
On the Palate: Full-bodied, dry, and incredibly fresh. It brings crisp apple and ripe peach flavors, finishing with a unique, subtle "sherry-esque" minerality that makes it unforgettable.
Pairing
Perfect Pairing: Fantastic with local seafood, pasta, or alongside the generous cheese platters you enjoyed at the vineyard.
